Batch 004, "Susurrus", Ex-Ruby port cask. Cask Strength - 57.1% ABV, 50cl
Our first single cask rum, drawn exclusively from Cask 07, an ex-ruby port cask, after an 8 month maturation period.
Introducing our first single cask rum, distilled and matured entirely on-site at our distillery. This release is not only a milestone for us, but, as far as we know, no other distillery in Buckinghamshire has achieved this—making it truly one-of-a-kind in the county.
In March 2024, we received four 100-litre ex Ruby Port casks from the renowned J. Dias cooperage in Portugal, each one destined to hold our pristine white rum. These casks have been resting in our distillery, slowly transforming our rum over time. Our patience has paid off, and we are truly proud of this release.
This batch has been drawn exclusively from one of these casks, No 007, where it spent 8 months maturing. Our 100% pot still rum interacted beautifully with the cask over time, and now presents a rich profile with layers of dried fruit, oak, and subtle spice. A gentle sweetness imparted by the previous Port content is also present. It has been bottled at cask strength, 57.1% ABV.
It is unsweetened, un-spiced, and un-coloured, with all the colour and flavours having been derived directly from the barrel itself over the course of the maturation.
It is a limited edition of only 200 bottles.
It can be enjoyed neat, or on ice. In a cocktail, it works well in a Rum Old Fashioned, which allow the flavours to shine through.
We’ve named this batch “Susurrus”—a word meaning the sound of rustling leaves. It’s a fitting name, reflecting the amber hues of the liquid and the autumn season in which it was bottled.
