Our Sugar

We use Evaporated Cane Juice (ECJ), a natural dehydrated sugar obtained from 100% raw sugar cane juice. ECJ is made by crushing sugar cane to extract the juice, which is then heated over a low fire, often stoked by the dried spent sugarcane pulp. As it cools, the juice thickens, and is then poured into moulds to crystalise naturally.

Unlike in the manufacture of refined sugar or molasses, no chemicals or additives are added at any step in the process. The ECJ retains most of the nutrients and minerals from the original cane juice, and also the rich aroma and flavour. 

We source our ECJ responsibly from co-ops and small family owned farms, and avoid the larger sugar mills.

Fermentation

We mix our ECJ with water to form a syrup, and then add yeast. We don’t add any additional additives or nutrients, as the solution already contains all the necessary nutrients to keep the yeast happy over the fermentation process.

After fermentation, we also wait for our yeast to settle naturally, rather than use any clearing agents. The entire process can take anything from 7 days to over 1 month to complete, depending on the yeast strain we use, the fermentation temperature, and a number of other factors.

Distillation

We distil our wash in our beautiful hand made alembic still and coil condenser. Our still is made in Portugal, and has a capacity of 600l. It is gas fired, but also has the capability to be retrofitted with electrical heating elements.

Depending on our recipe, we may distil once, twice or even three times. 

Distillation times can range anything from a couple of hours for a small stripping run, to over 18 hours for a spirit run.

Blending and Bottling

We blend each batch by hand. Unlike larger brands, we celebrate the diversity in flavour that each batch contains.
